Gir means hill
Dhar means to carry
So Giridhar means the one who carries hill.
Gov means cow
Vardhan means nourisher or nurturer
Govardhan means the one who nurtures the cows.

Earlier there was a tradition in hinduism to worship the king of lords, lord Indra so that he would bless the farms and lands of people with rain. However, Shri Krishna felt that it was not necessary as it was lord Indra's duty. He rather focused on the karma marg (the path of action) and asked people to worship goverdhan parvat that nourishes their cattle and also provides them with almost all tge essential things for life.
Goverdhan means the one who nourishes the cows. So people started worshipping Goverdhan parvat. But lord Indra took this as an insult and flooded the village of Gokul. In order to save his people, lord Krishna, a child at that time, carried the Goverdhan parvat for several days on his little finger so that the parvat acted as an umbrella saving the villagers and the cattles. After days of floods, Lord Indra realized his mistake that he cannot win from the incarnation of Narayan himself. He left his ego and surrendered to lord Krishna.
