INGREDIENTS;

5 cup. rice RUZ/ESH ( it depends how many people )
5 cup. water MOYa
5 cup. salt MALIH ( same cup of RUZ/ESH)
9 pcs. fish SAMAK (3 kinds)
vinegar KHAL ( smell)
ginger JINJABIL ( minced)
QOSBARA/ JINJILAN dried
6 pcs. onions BASAL (small sizes )
2 pcs. garlic THOM ( minced)
1 pcs. LEMON JUICE
6 pcs. tomatoes BANDORA/ TOMAT ( big cubes )
black pepper FIL-FIL
turmeric QORQOM
BAHARAT
salt MALIH
oil ZIT ZETON ( for MAMA only.)

rice RUZ/ESH..

> boiling a water MOYa at the pot QIDIR then if it's boiling,
ADD the rice RUZ/ESH let it cooked until become LONG.

> then remove the water MOYa and sit a side the rice RUZ/ESH, if it's done put some oil ZIT then ADD the rice RUZ/ ESH
⁃ (make it like a mountain then tusokin for air.)
COVER and let it cooked at HEAT..



BLEND.

> cut tomatoes BANDORA/ TOMAT (big sizes), ginger JINJABIL ( minced) a lil bit water MOYa to BLEND and sit a side.


DIKDIKIN..

> QOSBARA ( chopped), garlic THOM ( DIKDIKIN. ) sit a side.

> Clean the fish SAMAK and put vinegar KHAL ( to remove the SMELL ) then and sit a side,
rinsed it well and let it DRY if it's DONE put ALL THE SPICES TO MARINATE..

1/2 cup. black pepper FIL-FIL
1/2 cup. turmeric QORQOM
1 1/2 cup. BAHARAT
1 1/2 cup. salt MALIH
1 pcs. Lemon
ginger JINJABIL ( minced)
garlic THOM ( minced)

> MIXED It ALL and put in TALAJA for 20-30 minutes.

> separate fish SAMAK for MAMA. ( fry it only ZIT ZETON ).

> if it's DONE MARINATE, FRY IT ALL then sit a side.
( put it on pot QIDIR with KHOBOS ).



MARAG SAMAK...

> put some oil ZIT and ADD onions BASAL let it FRY until GOLDEN BROWN/ reddish.

> ADD the QOSBARA at the fry onions BASAL, ADD bell pepper
( ADD DRIED QOSBARA OPT. )
MIXED IT and CLOSE let it simmer a bit..

> ADD SPICES.
1 cup. BAHARAT
1/4 cup. FIL-FIL
1 cup. MALIH
1/2 cup. QORQOM

> let it cooked for some minutes, then ADD the already BLEND
tomatoes BANDORA/ TOMATOM with ginger JINJABIL mixed it well.


TAMOR HINDI.

> TAMOR HINDI, 2 spoon. FLOUR with a lil bit MOYa, mixed it well and ADD IT TO QIDIR ( they want a lil bit sour.) closed the QIDIR and let it HEATED so cooked it SLOWLY.
