Carrie doesn't mind the nickname Tony gave and calls her, it's obviously an endearing nickname and she finds it really cute but as she got a little bit older, like 19 or 20, she felt a little embarrassed about him calling her that as she felt that she's getting too old to be called Care Bear, especially in public and in front of her own friends, which is what she mostly has a problem with.
She expresses this to Tony and although he respects that she doesn't want to be called that all the time anymore and agrees to try not to too often, he tells her that she's always going to be his "care bear" no matter how old she gets.
