An easy, tasty and healthy chicken starter that can be made under 30 minutes. It tastes mildly spicy
INGREDIENTS
250 grams of cubed boneless chicken
3 to 4 peppers crushed
¾ tbsp. ginger minced
1 tbsp. garlic minced
1 tbsp. soya sauce
1 tsp vinegar
½ tsp sugar
salt as needed
1 tbsp. sesame oil preferred (any other oil will just work fine)
1 medium onion thinly sliced or 2 to 3 sprigs of spring onion
To make red chili paste
1 tsp red chilli powder or 12 red chilies(less spicy variety)
1 tsp oil
1½ tsp. water (or as needed)
optional
¼ cup capsicum / bell peppers
METHOD
STEP1
Add red chili powder, sugar, 1 tsp oil and 1½ tsp water to a small bowl. Mix to smooth paste. Set aside. or If using red chili, soak them in little warm water for 20 minutes and blend to a smooth paste along with sugar and little water.
STEP2
Add chicken to a heavy bottom bowl. Sprinkle salt and ½ tbsp ginger, ½ tbsp. garlic over the chicken. Cover and cook on a low flame till the chicken is soft cooked. If there is not enough moisture to cook the chicken, sprinkle some water and cook.
STEP3
Pour vinegar and soya sauce to the hot chicken and set aside.
STEP4
Heat 1 tbsp. oil to a pan, add minced ginger, garlic, pepper and fry for a while, till the ginger garlic smells good.
STEP5
Add onions or white parts of spring onions and fry until golden. If using capsicum, add it now and fry until they are half cooked. Pour the soya sauce, vinegar from the chicken, red chili paste and salt as needed.
STEP6
Stir well and check and adjust salt, sweet and sauces.
Cook till the mixture thickens, when it begins to smell good, add chicken and toss well. If using spring onions add them now.
Garnish with celery or spring onions.
STEP7
Serve chicken as a starter.

method 2 of chicken recipe (deep fry)STEP1 :
To a bowl add
add ¼ kg chicken, ½ tbsp. soya sauce, ½ tsp vinegar and salt. Marinate and set aside for 45 minutes to 2 hours.
STEP2
Sprinkle 2 tbsp. corn flour on the chicken. Mix well to coat.
If using egg add it now. One small egg for ½ kg chicken works well. If chicken looks dry, can sprinkle very little water. Using egg is optional. STEP3
Heat oil and deep fry until golden.
STEP4
Rest to follow from step5 mentioned above, use 1 tbsp soya sauce and ¾ tsp vinegar for seasoning the fried chicken.Notes
If chicken is not tender, it can be soaked in buttermilk overnight and refrigerated. It tenderizes the chicken well. Next morning drain off completely and use.
