In this story, a lot of knowledge about (Y/N) and Hollow Knight will be derived from the wiki and from various headcanons. One of these being that vessels don't actually age. Vessels are created with Void, and I headcanon that it allows vessels to live seemingly forever, unable to age normally like humans. I think that it works similarly to pokemon evolution, changing their form and maturing when they feel like it.
