CHICKEN SOUP
Ingredients:
1 whole chicken, cut into pieces (or chicken parts of your choosing)
1 tablespoon ginger paste
1 tablespoon red shallots paste
1 tablespoon garlic paste
1 large onion, sliced
2-3 pcs of aniseed
2-3 pcs cardamon pods
2-3 cloves
1 cinnamon stick
White or black pepper (white is preferred for chicken)
Salt to taste
Water
3-4 potatoes or vegetables, diced (optional)
Instructions
In a pot, add all spices, onions, paste ingredients, and water just enough to cover the chicken. When the chicken is fully boiled, add potatoes (if using other vegetables, let the meat tenderise then add the vegetables). Add salt and pepper to taste. Cook until potatoes have softened and chicken is tender.
In a frying pan, fry 4 pieces of shallots thinly sliced until brown. Add into the soup. Add extra water if desired to increase the amount. Add pasta or eat with rice.
Note:
You can use other meats with the exception of seafood. It's good for postnatal women--just add extra ginger and pepper. Good for breastfeeding mothers as well.Shared by: zararazia
