Lemon Poppy Seed Mug Cake

Ok. This was created because of the last chapter, ideas. I found a ton of different things I could do in a mug and this was the only thing someone commented on... and I love it... so... YUP!

(This is gonna be so much fun!) Sometimes I wonder, while this book is just starting and all, how many people actually enjoy this book. If they like this bold print I put in here, if they're ok with how I format it, all that stuff. I also tend to wonder if people ever try these recipes. Some (GINGERBREAD MUG CAAAAKE) of the recipes I put in here are really good while some aren't.


Ingredients:

6 tablespoons of all-purpose flour

2 1/2 Tablespoons of sugar

1/4 Teaspoon of baking powder

3 Tablespoons of milk (room temperature)

1 Tablespoon lemon juice

2 Tablespoons of salted butter (melted and cooled)

1/2 Teaspoon of vanilla extract

1/2 teaspoon (or more) of poppy seeds

Instructions:

1. Put all of your dry ingredients besides for the poppy seeds into your mug (make sure it's not your favorite mug. The bottom may get little scratches on it from mixing it in your mug. If you don't have any mugs that are your least favorite, try mixing your ingredients in a small bowl or measuring cup). This should include flour, sugar, and baking powder. I used brown sugar instead of granulated or powdered sugar.

2. Add in your wet ingredients along with your poppy seeds. This should include milk, lemon juice, vanilla, and poppy seeds.

3. Cook your poppy seed cake. I put my cake in for 1 1/2 minutes (a minute and thirty seconds) but my microwave might be hotter than yours. My microwave is 1000W to 1200W.

4. Now you can decorate! I put nothing on top, but this is the time to be creative, explore new tastes. I find that lemon goes well with (this is just to name a few) apple, strawberry, blackberry, mint, cinnamon, lime, mango, poppyseed (I just put that there because it was really obvious, being in the recipe already), vanilla (also in the recipe), grapes, ginger, honey, chocolate, caramel, cherries, blueberries, raspberries, whipped cream, cream, and walnuts! XD That list was a bit long.

I really hope you try the recipes in this book. I would say this is my new favorite but I still love the gingerbread mug cake more. Lol! Let me know what you think! Please leave a review if you like this, I may or may not post your review on this book! Here's a review that I made myself!

This was excellent! I used brown sugar instead of granulated or powdered sugar... so ya. I loved the lemon poppy seed cake! I ate some and then gave the rest to my sister. I also used lemon juice that you pour from a bottle, so it made the lemon juice blend in a bit. The next time I make this, I'll use all the right ingredients and see how it turns out. One more thing, this recipe was a bit bigger than the other recipes, so it took up the whole cup when it rose rather than half, and it took longer to cook. XD

It is actually really good! I didn't know we had poppy seeds so I did it without them. I was a little upset when I realized we did have poppy seeds, but everything is alright. Even though I followed all of the steps, I still feel like I did something wrongs... XD

Ok, with the rating, I give this a 4. It is really good but might need a little more lemon flavoring in the future (although I may have done it wrong so...). And powdered sugar is also good on top too!
