Cuisine: Indian
Cooking Time: 30 MinutesINGREDIENTS:
Khoya - 2 cups(concentrated milk solid, available at most Indian grocery stores)
All purpose flour(Maida) - 1 cup
Milk - 1/4 cup
Baking soda - A pinch
Ghee/Oil - for frying
Pistachios - for garnishingFor sugar syrup:
Sugar - 3 cups
Water - enough to cover the sugar
Cardamon powder (optional) - 1 tspSTEPS:
STEP 1: Crumble khoya finely.
STEP 2: Add it with maida, milk and baking soda and knead it together to make a dough.
STEP 3: Keep it aside for 1 hour.
STEP 4: Heat ghee/oil in a kadai or a pan.
STEP 5: Once it becomes hot, turn the flame to medium.
STEP 6: Make small balls off the dough.
STEP 7: Take a small portion of the mix and deep fry to test the consistency of the mix.
(If the ball breaks, then the mix is too
moist, so add little more flour and adjust the consistency.)STEP 8: Fry all the balls till it becomes golden brown.
STEP 9: Drain the oil/ghee and add them to the hot syrup. Allow them to rest for 3 hours and serve. Garnish them with pistachios.
For making the Syrup:
STEP 1: Take a pan and add sugar and enough water.
STEP 2: Stir the contents, till you get a thread-like consistency.
STEP 3: Add cardamon powder to this and mix well(optional).
(If immersed immediatly, the crispness of the jamuns is maintained.)______________________________________
COOKING TIPS
To remove the skin of garlic cloves easily, rub them with little amount of oil and dry them in sun for 20-30 minutes before peeling.
