Burgers are great, but this is a fun healthy twist on an original using black beans! These vegetarian burgers can be made in less than an hour. They can also serve about 6 burgers.
Ingredients
2 cans black beans, drained and rinsed
1/2 cup Panko breadcrumbs
2 large eggs, lightly beaten
2 scallions, minced
3 tablespoons chopped cilantro
2 garlic cloves, minced
1 teaspoon ground cumin, or more to taste
1/2 teaspoon dried oregano
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 tablespoon olive oilDirections
1. Place 2 cups of the black beans in the bowl of a food processor and pulse until chunky. Transfer the processed beans to a large mixing bowl, and add all the black beans, breadcrumbs, eggs, scallions, cilantro, garlic, cumin, and oregano then mix until well combined. Divide the mixture into 4 patties, 3/4 to 1 inch thick. Sprinkle the patties with the salt and pepper.2. Heat a 12-inch nonstick skillet over medium-high heat; once hot, add the oil. Cook until well browned on both sides and heated throughout for 8 to 10 minutes. Serve.
