INGREDIENTS:1 tablespoon olive oil4 large eggs, lightly beaten1/4 cup half and halfKosher salt and freshly ground black pepper, to taste8 mini croissants, halved horizontally4 ounces thinly sliced ham4 slices cheddar cheese, halvedDIRECTIONS:Heat olive oil in large skillet over medium high heat. Add eggs to the skillet and cook, whisking, until they just begin to set. Gently whisk in half and half; season with salt and pepper, to taste.
