Palmiers, also known as Elephant Ears, are very simple cookies to bake yet they make for a very elegant dessert. With a flaky pastry crust and decadent fillings of caramel or chocolate or cinnamon, Palmiers are super delicious and very fun to bake!
Below is the Recipe for Cinnamon-Sugar Palmiers.
Ingredients:
1 Sheet Frozen Puff Pastry
1/4 C + an additional 1/3 C Granulated Sugar
1 TBS Unsalted Butter, Melted
3/4 TSP Ground Cinnamon
1/2 TSP Ground Cardamom
Water
Prepare a Work Surface by sprinkling a flat surface with 1/4 C granulated sugar. Unfold the puff pastry over the sugar.
Once pastry is unfolded completely, apply a thin coat of the melted butter to the top. This will serve as an adhering agent for the cinnamon sugar coating....which will turn into a beautiful caramel glaze in the oven.
In a separate bowl, mix together the remaining sugar, cinnamon, and cardamom. Once mixed completely, apply a coat of the sugar mixture over the entirety of the buttered side of the pastry sheet.
Now comes the fun part.
Roll the two sides of the pastry inward, horizontally, until both sides meet each other at the middle. Then, fold both sides over each other so they form a single rectangle. Place this roll into the refrigerator and allow to chill for up to 10 minutes before baking.
Preheat the oven to 375 degrees Fahrenheit. Prepare two baking sheets with a layer of parchment paper.
Okay, 10 minutes have passed.
Now it's time to cut the cookies. With a sharp knife, cut the chilled cookie log into several, 1/4 inch wide discs. They should look a bit like flattened hearts.
Assemble these cookies on the baking sheets about 1 inch apart. Bake for about 12 minutes, until golden brown and crispy. They may look slightly burnt, but this is the sugar caramelizing in the oven. Nothing to worry about.
Once baked, allow to cool for a few minutes before transferring them to a baking rack to cool completely.
