This recipe comes straight from one of my favorite feel-good novels, Tweet Cute by Emma Lord. Featuring two teenage restauranteurs who start a Twitter flame war over a sacred grilled cheese recipe, this story is absolutely vibrant and impossible to put down. As this story revolves around restaurants and baking, multiple delicious recipes are alluded to throughout the pages!
One of these recipes is called MONSTER CAKE, and boy, oh, boy, am I happy I stumbled across the recipe on Emma Lord's blog, www.emmalordwriting.com. I would highly suggest reading her high-energy post about MONSTER CAKE, as well as another dessert featured in the novel, SEX-POSITIVE BROWNIES.
Below is a simple version of Emma Lord's Monster Cake recipe.
Ingredients---
1 Box Brownie Mix
1 Box Funfetti Cake Mix
Edible Cookie Dough
A Tub of Vanilla Frosting
A Bag of Rolos
A Bag of Reese's Cups
A Box of Oreos
Googly Eyes (The sugar kind that you can eat!)
Step One: Preheat the oven to 350 degrees Fahrenheit and prepare a 9 x 13 inch glass cake pan by spraying it thoroughly with non-stick cooking spray.
Step Two: Make the Boxed Brownie batter and Boxed Funfetti Batter as instructed on their respective boxes in two separate bowls.
Step Three: Prep your candies! Unwrap 16 Rolos, Quarter Eight Reese's Cups, and Quarter 12 Oreos. You can add more if you want a chunkier bite!
Step Four: Divide the candy in half. Dump half into the Brownie batter and half into the Funfetti batter. Stir up the candies until incorporated.
Step Five: Now it's time for the pan. Dump globs of Cake and Brownie batter into the prepared pan, then swirl them around with a fork. Make sure you can still distinguish some brownie parts from cake parts.
Step Six: Bake for 20 minutes. After timer goes off, pull the Monster Cake out of the oven and put globs of the edible cookie dough on the top of the cake. Put it back into the oven for another 10 minutes.
You can either let the cake cool or eat it fresh out of the oven. The middle of the cake should be a little under-baked, so if you are afraid of raw eggs, you can substitute them for applesauce. :)
