Delicious ricotta-cream cheese filling, chocolate frosting, and simple vanilla cake make for a fun dessert you can bake for any occasion! I am in love (I repeat, LOVE) with Cannolis, so upon discovering this recipe in the Delish: Insane Desserts Cookbook, I just had to try it out. These cupcakes are delicious and fairly simple to make!
Below is the recipe for Cannoli Cupcakes.
Ingredients----
1 (15 oz box) Vanilla Cake Mix
2 Stick Unsalted Butter, Softened
2 Blocks Cream Cheese, Softened
1 C Whole-Milk Ricotta
6 C Powdered Sugar
2 TSP Vanilla Extract
1/2 TSP Ground Cinnamon
1/2 TSP Kosher Salt
2/3 C Mini Chocolate Chips
1 C Semi-Sweet Chocolate Chips, Melted
2 TBS Coconut Oil
How to Make the Cupcakes:
1. Preheat the oven to 350 degrees Fahrenheit and line two muffin tins with cupcake papers.
2. Prepare cake batter according to the box's instructions. Divide batter evenly among the cupcake papers on both baking sheets, and bake for about 20 minutes or until fully baked. Let cool completely.
3. In a large bowl with a hand mixer beat together butter, cream cheese, and ricotta until fluffy. Add powdered sugar, vanilla, cinnamon, and salt and beat until smooth. Fold in the mini chocolate chips. Transfer the filling to a large pastry bag fitted with a large piping tip.
4. Using a teaspoon, scoop out the middle of each of the cupcakes to create a well. Pipe frosting into the well and over the top of each cupcake.
5. Stir melted semi-sweet chocolate with coconut oil until smooth. Spoon over the frosting-covered cupcakes and let them cool before consumption.
