Fluffy Peanut Butter Cookies!

This no-fail peanut butter cookie recipe is fluffy, gooey, and super peanut-buttery! Plus, it achieves all of it's greatness without having to chill dough! *chef's kiss* I've made this recipe multiple times for friends and family, and it is one of my favorite easy-bake recipes. 

Below is the recipe for Peanut Butter Cookies.

Ingredients----

1 1/2 C All-Purpose Flour

1/2 TSP Baking Soda

1/4 TSP Salt

1 Stick Unsalted Butter, Softened

3/4 C Brown Sugar, Packed 

1/4 C Granulated Sugar

3/4 C Creamy Peanut Butter

1 Large Egg, Room Temperature

1 TSP Vanilla Extract

(optional) 3 TBS Granulated Sugar


How to Make Cookies:

1. Preheat the oven to 350 degrees Fahrenheit. Line two baking sheets with parchment paper. Set aside.

2. In a large mixing bowl, whisk together the flour, baking soda, and salt. Set aside.

3. In the bowl of a mixer with the paddle attachment, cream the butter, brown sugar, and granulated sugar until well combined. Add the peanut butter, egg, and vanilla extract until fully incorporated. Add the dry ingredients slowly until combined. 

4. Place the 3 TBS of granulated sugar into a small bowl. With your hands (or a 1.5 TBS cookie baller), create balls of dough about 1 and a half tablespoons big. Roll each ball in the granulated sugar before placing on the prepared baking sheet, one to two inches apart. 

5. Bake for about 10 to 12 minutes, or until edges are set. Remove from the oven, allow to cool for 10 to 15 minutes in the baking pans. Then, transfer cookies to a wire rack to cool completely.
