I have found true bliss in these 'Cinnamon Toast Crunch' Cupcakes created by the team at Delish. And delish these cupcakes are! IF you thought cinnamon toast crunch was good enough on its own, you have no idea. These cupcakes are like cinnamon toast crunch had passionate sex with Betty Crocker cake mix.
Below is the recipe for Cinnamon Toast Crunch Cupcakes.
Ingredients--
(For the Cupcakes)
1 Box Vanilla Cake Mix (plus ingredients required on the box)
1 TSP Ground Cinnamon
1/4 C Cinnamon Sugar
(For the Frosting)
2 1/2 Sticks Unsalted Butter, Softened
3 3/4 C Powdered Sugar
1 1/4 TSP Vanilla Extract
3/4 TSP Ground Cinnamon
A Pinch of Kosher Salt
3-4 TBS Heavy Cream
And some cinnamon toast crunch for a sweet garnish!
How to make the Cupcakes:
1. Set your oven to 350 degrees Fahrenheit and line 2 muffin tins with cupcake liners.
2. Prepare cake mix as instructed on the box, then whisk in cinnamon. Fill the liners with 1 TBS batter, then sprinkle an even layer of cinnamon-sugar over the cupcake batter. Repeat this layering once more, then finish with a layer of cupcake batter (there should be two layers of cinnamon-sugar, three layers of cupcake batter). Bake these bad boys for about 20 minutes or until fully baked. Let them cool for 10 minutes in the cupcake tin, then transfer to a wire rack to cool completely.
3. For the frosting: In a large bowl, beat the butter and powdered sugar together until fluffy and light. Add powdered sugar, vanilla extract, cinnamon, and salt. Beat until fully combined. Add heavy cream 1 tablespoon at a time until the frosting reaches a creamy, pipe-able consistency. Transfer the frosting to a piping bag fitted with a round tip. Pipe onto the cooled cupcakes. (Optional, but totally Instagram-able) Add a sprinkling of cinnamon sugar to the top of each frosted cupcake, then stick two to three pieces of cinnamon toast crunch cereal on the top to create aesthetic appeal!
4. Breathe in the deliciously cinnamon flavor of your kitchen, consume your creation, and experience total foodgasm.
