My mom loved buying these in the store: the crispy streusel topping, tart caramel sauce, and apple chunks. Yummmm. Alas, they stopped selling the Apple Muffins in the local grocery store. But this didn't stop me from baking a fresh batch for my mom. This recipe turned out incredibly well!
((You can substitute the Plain Yogurt+Milk for 1 C Buttermilk.))
Ingredients---
(For the Streusel)
1 TBS Unsalted Butter
1/3 C Brown Sugar, Packed
1/2 TSP Ground Cinnamon
(Optional) 1/2 C Finely Chopped Walnuts
(For the Muffins)
1/2 C Vegetable Oil
1 1/3 C Brown Sugar, Packed
1 Egg
2 TSP Vanilla Extract
3/4 C Sour Cream or Yogurt
1/4 C Milk
2 1/2 C All-Purpose Flour
1/4 TSP Salt
2 1/2 TSP Baking Powder
1/2 TSP Baking Soda
1 3/4 C Coarsely Chopped, Peeled Apples
(For the Caramel Sauce)
2 TBS Unsweetened Butter
1/4 C Brown Sugar, Packed
2 TBS Milk
1 TSP Vanilla Extract
1 C Powdered Sugar
How to Make the Muffins:
Step One: Combine all ingredients for the streusel together in a bowl until a crumbly texture results.
Step Two: Preheat the oven to 400 degrees Fahrenheit. Line a muffin cups with paper liners.
Step Three: In a medium sized bowl, mix together the dry ingredients (flour, baking powder, baking soda, salt) until combined. In another bowl, mix together the oil, brown sugar, and egg with a wooden spoon. Once combined, add the yogurt/sour cream, milk (or 1 C of Buttermilk), and vanilla extract. Add the wet ingredients to the dry ingredients. Fold in the apple chunks. If the mixture is too thin, you can add a wee bit of flour to thicken it.
Step Four: Spoon equal amounts of muffin batter into the prepared muffin tin. Divide the streusel evenly over the top of each muffin.
Step Five: Lower the temperature to 350 degrees Fahrenheit. Bake the muffins for 20 to 25 minutes, or until the tops of the muffins spring back when pushed. Let the muffins cool for 30 minutes.
Step Six: While the muffins are cooling, prepare the caramel drizzle. Combine brown sugar, butter, and milk in a medium-sized microwave-safe bowl. Microwave on high for 30 seconds, stir, then return to the microwave for 15 seconds. Add vanilla. Then, add powdered sugar while stirring the mixture. You can add a little milk or powdered sugar to get your desired thickness. The drizzle sauce should drizzle easily but shouldn't be too runny. When the muffins are completely cool, drizzle the caramel goodness over-top the finished muffins.
