Cookie + Hot Chocolate Mix + Marshmallows = Bliss
I've made this recipe for my friends during the holiday season, and they were asking me for more within a week. S'Mores Cookies are easy and fun to bake with the whole family! Decorating the cookies is the best part: marshmallows, chocolate syrup, and chopped up graham crackers (I like using cinnamon graham crackers for this recipe)!
Below is the recipe for S'Mores Cookies.
Ingredients---
1/2 C Unsalted Butter, Softened
1 12 oz. Bag Semi-Sweet Chocolate Chips
1 1/4 C Brown Sugar, Packed
3 Large Eggs
2 TSP Vanilla Extract
1/4 C Unsweetened Cocoa Powder
1 1/2 C All-Purpose Flour
1 1/2 TSP Baking Powder
1/4 TSP Salt
8 oz. Dark Chocolate (dice into 1/2 inch pieces)
12 Large Marshmallows, Cut in Half
How to Make the Cookies:
Step One: Prepare two baking sheets by lining them with parchment paper.
Step Two: In a medium, microwave-safe bowl, add butter and chocolate chips. Melt in microwave for 1 minute. Stir. Keep melting at 15 second intervals until completely melted. Let cool slightly for 5 minutes.
Step Three: In a separate large bowl, add the brown sugar, eggs, and vanilla. Beat together with a handheld mixer until just blended. Add the cooled chocolate mixture to the brown sugar mixture. Beat on medium speed for one 1 minute, or until just blended. Add the cocoa powder, flour, baking powder, and salt. Beat on low speed until combined. Cover the dough bowl and refrigerate for about 2 hours before baking.
Step Four: Preheat oven to 325 degrees Fahrenheit. Scoop balls of dough about 2 tablespoons big and place them on your prepared cookie sheet, making sure to keep the dough balls two inches apart. Flatten the dough balls slightly and bake in the oven for 10 minutes.
Step Five: Take the cookies out of the oven. Place one piece of chocolate on the top of each cookie, pushing the chocolate down slightly into the center until it slightly sinks into the cookie. Place one marshmallow half on each of the cookies, pushing down very slightly to make sure the marshmallows adhere to the cookie.
Step Six: Set your oven to broil. Put the cookies back in the oven for two to three minutes depending on the effectiveness of your oven. Look for slight browning on the marshmallows. When finished, allow cookies to cool on the baking sheet for about 10 minutes.
