I'll be explaining how and why these servants became alters (and what that means) and also giving my two cents. Enjoy!!!
Please be aware of some spoilers ahead, at least for the first singularity.
But before we start!!!
How to spot an alter:
Typically, alter servants have pale blonde, almost white hair. Their color palette consists of a lot of dark gray and red, and their eyes are most likely yellow in color. When side by side with their regular forms, they have basic elements of their costume remain consistent.
I'll show examples for each individual alter I discuss.
The most infamous: Jeanne da Arc Alter (Jalter)
SPOILERS HERE.
You first encounter this alter in the first singularity of Orleans.
Another servant, Gilles (a not so nice individual), made a wish on the holy grail so that his beloved Jeanne de Arc came back to life...only it was his idealized version of her, making her evil. Oops.
You then have to fight evil Jeanne and her crew, and if you're lucky you can summon her to your Chaldea which is fun.
Anyway, she became corrupted as a result of Gilles's wish on the grail (about the only good thing he did not gonna lie).

The alter who became Santa: Artoria Pendragon
Some spoilers here as well
She is the first alter servant you meet. In Fuyuki, you have to fight her and gain the greater holy grail blah blah blah.
She's fine and became Santa so people wouldn't be as scared of her but scared her reindeer oops only in Chaldea.

Okay welp there's a lot more alters in fate and I do not by any means know everything about them.
But yeah those are the two most common alters in fgo and yeah I wanna cosplay as them not gonna lie.
