Shrimp Rice Creole

1/2 cup onion, diced
1/2 cup green pepper, diced
1/2 cup celery, diced
1 bay leaf, crushed
1 lb frozen shrimp, thawed
1/4 cup vegetable oil or shortening
2 cups Earthly Grains® Instant White Rice
2 cans (15 oz each) tomato sauce
2 tsp. sugar
2 tsp. salt

~ Heat oil in saucepan, sauté onion, green pepper, celery, bay leaf and shrimp for 5 minutes.
~ Add rice, tomato sauce, sugar and salt. Bring to a boil.
~ Cover and simmer over medium heat for 10 minutes.
~ Makes about 6 servings.
