Ingredients
3 Honeycrisp apples
½ tablespoon lemon juice
1½ tablespoons sugar
1½ tablespoons brown sugar
1½ tablespoons vegan butter, melted
¾ teaspoons cinnamon (more for serving)
1 5.3oz containers Forager Project Vanilla Yogurt
3 tablespoons grain-free granola
Prep
Preheat the oven to 375º F and prep the apples by cutting them in half and trimming off the round ends so they lay flat. Then, use a melon baller to remove the seeds from the center of each apple half.
Add the apple halves to a baking tray and coat them with lemon juice.
In a separate bowl, mix together the sugar, brown sugar, melted vegan butter, and cinnamon.
Coat the apples with the cinnamon sugar mixture. Then, add to the oven to bake for 40-45 minutes until the apples are soft and tender but still hold their shape.
Remove the cooked apples from the oven and let them cool slightly.
To serve, fill each baked apple half with a large spoonful of Forager Project vanilla yogurt, a handful of granola, and a sprinkle of cinnamon. Enjoy!
Notes:
Baked apples can be stored in a closed container in the fridge for 2-3 days, however, they are best enjoyed right out of the oven.
