Ingredients
⁃ ½ Cup Melted Butter
⁃ ½ Cup Brown Sugar
⁃ ¼ Cup Sugar
⁃ 1 Egg
⁃ 1 ½ Cups Flour
⁃ 1 Teaspoon Ground Ginger
⁃ ½ Teaspoon Salt
⁃ 1 Generous Cup Carrots, Peeled & Finely Grated
⁃ 1/3 Cup Raisins (Or Currants)
Frosting
⁃ 2 Ounces Cream Cheese, Softened
⁃ 2 Ounces Butter
⁃ ¼ Cup Powdered Sugar
⁃ ½ Teaspoon Fresh Lemon Juice
Directions
⁃ Preheat oven to 350
⁃ Cream together butter, sugar, and egg
⁃ Combine flour, ginger, and salt and blend into creamed mixture
⁃ Mix in carrots and raisins/currants
⁃ Drop by spoonfuls onto greased cookie sheet and flatten lightly
⁃ Bake for about 10 minutes then let them cool
⁃ Cream together frosting ingredients and frost
