GAJAR KA HALWA.

Ingredients:-

Carrot - 2 kg grated.

Milk - boiled 2 ltr.

Sugar - 1 & 1/2 tbsp.

Khoya - 1/2 cup.

Ghee - 1/2 cup or as required.

Nutmeg powder - 1 tsp.

Cardamom powder - 2 tsp.

Dry fruits/ nuts as required.

Method:-

Rinse , peel / grate carrot...

In a bowl, add carrots & heat up on High flame, for 2-3 minutes.....

Add milk, & bring the whole mixture to a boil & mix it....

On a medium low flame, uncovered, grated carrots will cook in the milk & the milk starts to reduce & evaporate.....

Now cook on high flame, & keep on stirring in between....

When all milk evaporates , add sugar & give it a good mix....

Keep stirring & continue to cook on a high flame.....

Add khoya, ghee & mix well....

Towards the end , add cardamom powder, nutmeg powder, & dry fruits, & give it a good mix.....

Cover & put it on simmer For 2-3 minutes....
