"Quick-fast everyone! I need those trays out by the time I get back from the kitchen, or I will make you drop and give me 30 at the end of this gruelling ass shift!" I call.
The pace of my workers speeds up instantly, hearing my tone of voice and some of them mutter the usual "yes boss!" As they move around.
This event is one of the biggest events of the year.
And big events need catering.
That's where my business comes in.
I manage a quickly growing business, catering to everything from small baby showers and family get togethers, down to massive luxury events.
Cooking has always been my passion.
Ever since I was a kid.
Of course, having West African parents, who thought nothing of it than a hobby, it took me a while to convince them it was lucrative.
They stopped pestering me when the money started to roll in though.
It's been 2 and a half hours since the charity campaign event got started.
It is for one of the first black senators to be put up for election in this state and it's a huge deal and honour for me to cater for this!
The amount of money he's paying isn't so bad either...
There's only one fucken problem.
We're short staffed.
Not enough for anyone to really notice...
But it's enough that I have noticed and it's stressing me out.
A bug is going around and 20% of my staff have caught it!
Thankfully it was none of my chefs or kitchen staff, but my wait staff!
So I'm on the floor today, serving with them.
I hear applause on the other side of the door, signalling that another massive sum of money has been poured into the campaign.
That means there will be a speech soon!
I do one last count of the champagne flutes that have been poured and set on the trays.
"Everyone start dispersing and serving, I'm right behind you!" I call.
They immediately do as I say, walking out the doors that have been held for them and serving the 700 guests waiting.
I check on my team in charge of re-pouring drinks and filling up new flutes for when trays start coming back.
