Boston Cream Pie Ice Box Cake

 This Boston Cream Pie Ice Box Cake gives you all the flavors you want in Boston Cream Pie, but it is super easy to make, no oven required.

~Ingredients:

-Cake:

1 Box of Graham Crackers.

2 boxes of instant vanilla pudding mix.

3 Cups of cold milk.

1 Cup Heavy Cream.

1/4 Cup Powdered Sugar.

1 Teaspoon Vanilla Extract.

-Chocolate Topping:

1/2 Cup Butter.

1/2 Cup Semi Sweet Chocolate Chip.

1 Cup Sugar.

1/4 Cup Milk.

1 Teaspoon Vanilla Extract.

~Directions:

Step 1: In a small bowl mix the heavy cream until soft peaks forms. 

Step 2: Add powdered sugar and vanilla, and mix until stiff peaks form. Set aside.

Step 3: Line a baking dish with  a layer of graham crackers. Break them into squares or smaller to make them fit.

Step 5: In a large mixing bowl mix together two boxes of pudding mix with 3 cups milk. Whisk until well combined. 

Step 6: Fold in the prepared whipped cream.

Step 7: Pour half of the pudding mixture over the graham crackers.

Step 8: Repeat with another layer of graham crackers and the remaining pudding. Top with a third layer of graham crackers.

Step 9: To Make The Chocolate ToppingIn a small sauce pan mix together all of the ingredients for the chocolate topping.

Step 10: Whisk and cook until the sugar has dissolved, but do not boil.

Step 11: Cook for about 5 minutes over a very low simmer. You can test on your fingers or taste to see if its smooth and the sugar has dissolved

Step 12: Pour over the graham crackers, spreading evenly.

Step 13: Place in the refrigerator for about 4 - 6 hours until the chocolate is completely set.
