Strawberry Shortcake Poke Cake

Who else is melting wherever they live?

I am! Texas is pretty hot and humid, so we're always trying to figure out ways to cool down. Besides playing in the sprinklers and going to the splash pad, we also love to make and eat cool treats this time of year. We usually have popsicles on hand during these hot months, but whenever there are get togethers, I like to make a cool dessert. This recipe is perfect for the summer time.


~Ingredients: 

Yellow Cake Mix (plus ingredients on the back).

1 small box of instant Strawberry Jello.

1 Cup Hot Water.

1 Cup Cold Water.

1 Block (8 oz) Cream Cheese (softened).

1 Teaspoon Vanilla.

1/2 Cup Powdered Sugar.

2 Cups Cool Whip.

2 Pints Strawberries (sliced or chopped).

~Directions:

Step 1: Make Yellow Cake Mix by following directions on the box.

Step 2: Once the cake is out, take a fork and poke it all over.

Step 3: While the cake is still warm, make jello by adding mix to 1 cup hot water and then adding 1 cup cold water. 

Step 4: Spoon this liquid over the top of the cake, making sure it goes through the holes you made when with the fork.

Step 5: Refrigerate for 4 hours.

Step 6: When ready to serve make frosting by mixing cream cheese, and powdered sugar in a medium bowl. 

Step 7: Mix to well combined. 

Step 8: Fold in Cool Whip.

Step 9: Spread over the cake.

Step 10: Spread the sliced / chopped strawberries over the frosting or add individually to each cake squares.
