Easter Peeps Garden Poke Cake

If you are needing an easy but delicious dessert for Easter, you will want to make this peeps Easter Garden Poke Cake. Super fun, colorful plus ...it's easy to make.

~Ingredients:

-Chocolate Cake:

1 3/4 Cups All Purpose Flour.

2 Cups Granulated Sugar.

3/4 Cup Cocoa Powder.

1 1/2 Teaspoons Baking Powder.

1 1/2 Teaspoons Baking Soda.

1 Teaspoon Salt.

1 Cup Whole Milk, room temperature.

2 Eggs, room temperature.

1/2 Cup Vegetable Oil.

2 Teaspoon Vanilla Extract.

1 Cup Coffee, warm.

-Filling:

2 Boxes Instant Chocolate Pudding Mix.

4 Cups Whole Milk.

-Frosting:

1 Box Instant Chocolate Pudding Mix.

1 Cup Whole Milk.

16 Oreo, crushed.

8 oz Cool Whip, thawed.

-Topping:

16 Oreo, crushed.

15 Peeps Bunnies.

15 Orange Mike and Ikes.

Edible Easter Grass.*

~Directions:

-Making the Chocolate Cake:

Step 1: Preheat oven to 350 degrees. Line a 9 x 13 pan with foil and spray it with non stick baking spray . Set aside.

Step 2: In a medium bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda and salt. Set aside.

Step 3: Whisk milk, oil, eggs, coffee and vanilla in a large bowl until well mixed and slightly frothy.

Step 4: Add the dry ingredients to the wet ingredients and whisk until just barely combined and smooth. Do not over mix!

Step 5: Pour the batter into the prepared cake pan and bake for 25 - 30 minutes, or until a toothpick inserted comes out with a few moist crumbs.

Step 6: After you remove the cake from the oven, poke holes all over the cake using the end of a wooden spoon or something similar.

Step 7: Cool completely before frosting.

-Making the Filling:

Step 8: In a medium bowl, combine 2 boxes pudding mix and 4 cups of milk.

Step 9: Whisk well and pour evenly over the cake. Be sure to gently press pudding into the holes.

Step 10: Gently tap pan on counter to try and remove the air bubbles inside. Refrigerate for 1 hour.
