You can now enjoy a light and fluffy peanut butter cake for one in a matter of minutes. That's right! This deliciously easy Peanut Butter and Jelly Mug Cake is made in the microwave, using only a handful of ingredients.
~Ingredients:
3/8 All Purpose Flour.
3 Tablespoons Brown Sugar.
1/4 Teaspoon Baking Powder.
1/8 Cup Unsalted Butter.
3 Tablespoons Milk.
1/2 Teaspoon Vanilla Extract.
1 Egg Yolk.
1 Tablespoon Smooth Peanut Butter.
1 Tablespoon Strawberry Jam.
~Directions:
Step 1: In a small bowl, sift the plain flour, then add the sugar and baking powder. Stir together.
Step 2: In a separate bowl, add the butter and microwave until just melted.
Step 3: Add the milk, vanilla and egg yolk to the melted butter and whisk gently.
Step 4: Add the peanut butter and stir – it's ok if it's a little lumpy.
Step 5: Then add the wet ingredients to the dry ingredients and stir until combined.
Step 6: Pour cake batter in a mug, then microwave your cake for approximately 1 minute and 40 seconds*
Step 7: Leave to cool for a minute or two, then add a tablespoon of strawberry jam on top.**
~Recipe Notes:
*Our microwave is 900 Watts so adjust the time accordingly if your microwave is more powerful or less powerful than ours. The cake should be slightly firm on top and spring back when lightly touched.
**We used Strawberry Jam but you guys can use an kind of jam you would like.
