Lemon Poppy Seed Cake

Lemon Poppy seed Cake with Cream Cheese Frosting is so light and fluffy. It is great for a lovely afternoon snack or breakfast. Hope you all enjoy it Perfectly Lemony and perfect for spring or summer!

~Ingredients:

-Lemon Poppy Seed Cake:

1 Cup Granulated Sugar.

Zest of 2 Lemons.

3 Large Eggs.

1/2 Teaspoon Vanilla Extract.

1/2 Cup Milk + 1/2 Teaspoon White Vinegar.

3 Tablespoons Lemon Juice.

1 3/4 Cups All Purpose Flour.

1 1/2 Teaspoons Baking Powder.

1/4 Teaspoon Baking Soda.

1/2 Teaspoon Salt.

1 Tablespoon Poppy Seeds.

1/2 Cup Butter, melted.

-Cream Cheese Frosting:

3 oz Cream Cheese, softened.

1/4 Cup Softened Butter.

1/2 Teaspoon Vanilla Extract.*

1/2 Cup Powdered Sugar.

~Directions:

-Making the Lemon Poppy Seed Cake:

Step 1: Preheat oven to 350 degrees. Spray a 9 x 13 pan with non stick baking spray. Set aside.

Step 2n a large mixing bowl, stir together the sugar and the lemon zest together to create a damp mixture that resembles damp sand.

Step 3Stir in eggs and vanilla extract until smooth.

Step 4In a liquid measuring cup, stir together the milk, vinegar and the lemon juice together. Set aside.

Step 5In a separate bowl, whisk together the flour, baking soda, baking powder and salt together to combine.

Step 6Alternate stirring in wet and dry ingredients until everything is added into the cake batter. 

Step 7Gently stir in the poppy seeds and melted butter. 

Step 8Pour into prepared pan and bake 45 - 55 minutes or until baked thoroughly and toothpick comes out clean after being inserted. 

Step 9Cool 15 minutes in the cake pan before removing to the rack to cool completely.

-Making the Cream Cheese Frosting: 

Step 10: Whip together the cream cheese and the softened butter together for about 5 minutes.

Step 11Add in the powdered sugar and mix until all the ingredients are combined.

Step 12Add in the vanilla extract, mix thoroughly.

Step 13Spread over the cool cake and serve.

*You can use lemon extract instead or you can use both vanilla extract and lemon extract.

1) You can add poppy seeds and lemon zest to the frosting if desired.
