BUTTER CHICKEN SERVED WITH BASMATI RICE

INGREDIENTS:
-Basmati rice
-1 tin tomato paste
-black pepper
-1 cup of cooking cream
-1 onion, finely chopped
-1 table spoon of fresh ginger, grated
-chicken breast, cut into chunks
-1 tablespoon of garam masala
-salt
-1 teaspoon of cumin
-coriander
-1 teaspoon of mustard seed, crushed
-1 teaspoon of chili powder
-2-3 gloves of garlic, finely chopped
-2 tablespoons of oil

DIRECTIONS:
In a pot, boil enough water to cover the rice and cook until the rice is tender and the water dries up. Set aside. In a large pan, heat up the oil and add the onions until fragrant and translucent before adding in the garlic and ginger. Stir for a few second and then add the chicken. Once the chicken begins to cook, add the tomato paste, spices and allow to simmer for about 5 - 10 minutes until everything is well cooked. Add the cream and seasoning with salt and black pepper. Simmer the sauce for another five minutes before removing it from the stove. Serve your butter chicken along side the basmati rice and garnish with chopped coriander.
