TAMARIND CHICKEN ROAST

INGREDIENTS:
-2 tablespoons of soy sauce
-2 stalks of lemongrass, chopped
-chicken
-1 teaspoon of onion powder
-2 tablespoons of tamarind pulp
-3 gloves of garlic, minced
-1 tablespoon of brown sugar

DIRECTION:
Combine all the ingredients, apart from the chicken in a bowl and mix. When ingredients are well combined, add the chicken, cover and allow to marinate in the fridge for an hour. Preheat the oven until very hot. Roast the chicken with the marinade for 15 minutes, then turn and cook for an additional 10 minutes. Serve while hot, alongside a side of your choice.
