He wanted to scare her but not enough that she would be permanently scarred and he didn't want her to realise it was him. He wouldn't call what he was about to do torture exactly.

He walked back in after 20 minutes. She was still blindfolded and tears were still running down her cheeks. He picked up the blade and pushed it against her chest so she knew what he was doing.
"We're going to play a game."
She nodded obediently
"Do what I tell you or I'll make a cut. We can tally them up."
She whimpered
"We will start of easy."
"Do you love joe?" She nodded
"Uh oh wrong!" He placed the knife on her cheek and dragged down to make a small cut." She winced
"That's 1" he made another cut on her thigh as the first tally.
"Do you love Karlie Kloss?"
"How do y-" fuck! He had given himself away
He removed the blindfold.
She fear disappeared as she realised who it was.
"DO YOU LOVE KARLIE KLOSS!"
She shook her head. The fear instantly reappeared
As he picked the blade back up.
He untied her wrist and picked it up. He made a cut along her wrist and marked another tally.
"Wrong."
"Will you EVER go near her again?"
"No." She managed to reply
"Correct!"
One more for now.
"Will you EVER tell anyone who I am?"
She shook her head
"I want to leave a reminder of this."
He made a deep cut on her waist before painfully and slowly etching his initials into her ribs.
She tried to scream but his hand covered her mouth as he added two more marks to the tally. He tied her arms back and slowly kissed her, tugging at her bottom lip before walking away.
He returned with a set of clothes. "Get dressed, your going to be drivin home. You'll say you have no idea who I am. You'll be blindfolded so you won't know where we are."
She nodded in response. When they arrived he removed her blindfold but stopped her from leaving.
He placed one bullet in her hand.
"Next time I'll just shoot. If you snitch I have people who know what to do."
She nodded and left the car.
