COFFEE MOUSSE

Ingredients :
Gelatin : 10 grms
Thick black COFFEE - 1/2 cup
Sugar - 1/3 cup
Milk - 150 ml
Egg white of 2 eggs
Whipped cream - 1/2 cup

FOR TOPPING :
praline powder / caramel nuts /chocolate grated..

Method :
1) soak gelatin in black coffee for about 10 mins.
2) double boil (soaked gelatin) till completely dissolved.
3) add sugar when it is dissolved completely. Remove from the fire.
4) constantly add milk , blend well. Allow the mixture to cool thoroughly.
5) beat egg whites until stiff peaks , using egg beater.
6) now fold in egg whites , whipped cream & gelatin mixture, blend all togather for 2mins using egg beater.
7) set in small little mousse glasses , and refrigerate for at least 2 hours. Garnish with praline powder once it is set ..

PRALINE POWDER / CARAMEL NUTS :
Heat sugar in a heavy pan.
caramelize until it turns golden yellow. (Do not add water). Add nuts (coarsely chopped) mix well & pour on a buttered tray to set . When it turn hard, break into pieces. Put them in a polythene bag & crush coarsely using rolling pin .
