Ingredients
½Kg Tomatoes
1 Large Onion
1 teaspoons Freshly Ground Pepper
1 tablespoon Oregano
2 tablespoon tomato puree
8-10 tablespoon Extra Virgin Olive Oil
Salt to taste
2 Can Boiled Sweetcorn
1 Pack Pasta Shells
2 Serrano Pepper - finely chopped
Water to boilMethod
1.remove the seeds and chop the tomatoes
2. Peel and thinly chop the onion
3. Heat the oil in a wide based pan
4. Add the chopped onion and cook for a 2-3 minutes – we do not want to brown them but keep them translucent
5. Add tomatoes and cook for another 5-7 minutes
6. Add Sweetcorn and tomato puree and mix well
7. Simmer till you have a nice thick glossy sauce – add water if it's getting too dry
8. When the sauce has thickened to your preference add salt, oregano and pepper
9. Cook the pasta according to the packet instruction, al dente works best
10. Add to a serving bowl, and top with a good gulp of olive oil
11. Stir in the sauce and mix wellServe immediately !! Enjoy 😊
