When I first started with the series, I didn't know much of it, so when I created the guild in EO1, I just went with the names I knew and felt fitted the portraits of the characters.
After that, though, I compiled a list of names that I liked, not necessarily focusing on meanings as they tend to vary. Names that I found memorable, but easy to write over and over again if I were to incorporate them into a novel. Sure, some of the names took a little getting used to, but I can now write them all without any hesitation :3
With the following series after EO2, I was able to see the portraits of the classes before starting the game, so I spent a bit of time getting the names to fit the portraits of the characters. Bryce was a name that fitted the landsknecht character in my mind. Blayden was a cute name for a cute portrait. You see what I mean.
I'd make a short list of names for a character and then chose the one that fitted the most. Initially, Bryce's name wasn't Bryce, it was Dylan. But Dylan didn't fit the smartass, short-tempered vision of the character quite like Bryce did. Again, this is all personal opinion.
Sorry for the rambling, but, yes, there's a bit of a process involved with naming characters ^^
