ingredients
· 225g of self rising flour
· pinch of cayenne pepper
· pinch of salt
· 1tsp baking powder
·55g butter
· 100g cheddar cheese plus extra for topping
·80-90ml milk plus extra for glazing
· chilli flakesmethod
·Preheat the oven to 200'c/gas mark 6.lightly grease a baking tray with butter
· In a large bowl,mix together the flour, baking powder and using your fingers rub the butter into the mixture,until you have a crumb like mixture
· mix in the chilli, cheese, salt and milk. Use your hands to bring the mixture into a ball.
· sprinkle flour on a work surface, then lightly knead the ball of dough. Roll out the dough until it is about 2cm thick(you want to be able to cut them in half once they are cooked.) cut 12 scones out with a pastry cutter
·Brush the scones with a little bit of milk,then sprinkle the left over cheese on top.Place on the baking tray and bake for 12 to 15 minutes.serve them while warm with jam and cream if you want.
