ingredients
·2 small red chilli, chopped
·thumb sized piece of ginger, chopped
·small onion or jumbo banana shallots, diced
· 3 cloves of garlic
· 1 kilo of chicken, diced
· 1 tin of coconut milk, (add an extra tin if you want a cooler dish)
·1 tin of chopped tomatoes
· cumin
·six green cardamoms
·2tbsp of oil, on a medium heat
· ground coriander
· turmeric
· salt
·ricemethod
·heat the oil, then add the shallots, chillies,garlic and ginger to the pan, stirring occasionally. Let it sweat down.
· Add half the tomato, coriander, turmeric, cumin and 1/3 of the coconut to the pan and stir in.
·Add the chicken and cardamoms seeds, then add the remainder of the coconut, pinch of salt and the rest of the tomatoes.
·bring curry to boil then simmer for 20 to 30 minutes.
·however much rice you use out about a quarter of un inch more of water, bring to boil, one stir. Place the lid on and simmer on a very low heat for approx 10 minutes
