ingredients
·225g unsalted butter
·110g caster sugar
·1/2tsp salt
·350g self-raising flour
·6tbsp raspberry jam
·1tbsp icing sugarmethod
·preheat the oven to 180'c/gas mark 4
beat together the butter and sugar until the mixture is smooth and creamy
·add the salt and gradually work in the flour,adding a little at a time until a dough is formed. gather it into a ball
· Roll out the dough on a lightly floured surface until it is about 6mm thick
·use a pastry cutter to cut out 24 rounds, then with a smaller cutter make holes in the middle of 12.
· arrange all the rounds on a baking sheet lined greaseproof paper.bake for 10 minutes or until they are goldern
· allow to cool and the sandwich the rounds together with jam.Finally,dust the biscuits with icing sugar before serving.
