MASHED PLANTAIN (ETOR)

This is one of my favourite🍲 dish.Infact this food is taken in the afternoon and it's an Akan traditional food 🍲 which is also a royal 👑 dish.

INGREDIENTS
1 slightly ripe plantain
2 fingers of plantain
100ml palm oil
6 Spring onions
Pepper
2tbsp groundnut paste
30g fried groundnuts
2 eggs
1 salted fish (small size)
1/2 tsp salt
1 🍐pear

METHOD
Wash and peel all the 3 fingers of plantain.
Boil the plantain and eggs for 10 mins.when cooked drain the water out and cover to maintain the high temperature.

NB:This food is prepared in a Ghanaian grinding pot locally called "Ayewa " with "3ta".

Grind the pepper and 3 spring onions.
Add the salt to taste.
Add the cooked plantain and mash It with the 3ta. Make sure it's very smooth before it becomes cold.
When it loss it temperature, add the groundnut paste and continue to mash.Mash till it is uniformly mixed.
Place the palm oil on fire and add the salted fish. Let it fry to become slightly crunchy.
Pour it unto the mashed plantain. Mash it till the palm oil mixes uniformly with the plantain.
Chop the remaining spring onions.
Sprinkle the chopped onions, fried groundnuts unto the mashed plantain.
Slice the boiled eggs and pear.Place it on the mashed plantain.
