These chocolate peanut butter brownies are the perfect way to combine 2 things. A perfect combo of salty and sweet, plus a few peanut butter cups for decoration.
~Ingredients:
-Brownie Mix:
1/2 Cup Unsalted Butter, melted.
6 Tablespoon Cocoa Powder.
1 Cup Granulated Sugar.
1 Teaspoon Vanilla Extract.
2 Large Eggs.
1/2 Cup All Purpose Flour.
1/4 Teaspoon Salt.
-Peanut Butter Frosting:
1/4 Cup Unsalted Butter, softened.
1/3 Cup Peanut Butter.*
1 1/2 - 2 Cups Powdered Sugar.
1 Teaspoon Vanilla Extract.
1 - 2 Tablespoon Milk.
-Topping:
Chopped Peanut Butter Cups.
3 oz Chocolate (any kind).**
~Directions:
~Making the Brownies:
Step 1: Preheat the oven to 350 degrees fahrenheit. Line a 8 inch by 8 inch pan with parchment paper or aluminium foil and grease lightly.
Step 2: In a medium bowl stir together the butter and cocoa powder.
Step 3: Whisk in the sugar, eggs and vanilla extract.
Step 4: Gently fold in the flour and salt.
Step 5: Pour into the prepared pan and bake for 22 - 25 minutes, or until the top is set. Allow to cool.
~Making the Peanut Butter Frosting:
Step 6: In a medium bowl beat together the butter and the peanut butter.
Step 7: Beat in the vanilla extract, then slowly beat in the powdered sugar.
Step 8: If it seems too thick, beat 1 to 2 tablespoons of milk.
~Making the Topping:
Step 9: Melt the chocolate in a microwave in 30 second increments, stirring after each. Or in a saucepan over low heat, stirring often.
Step 10: Frost the cooled brownies.
Step 11: Sprinkle with chopped peanut butter cups and drizzle with the melted chocolate.
Step 12: Store the brownies at room temperature in an airtight container for 3 days, or in the fridge for 4 days.***

~Recipe Notes:
*We used smooth peanut butter but you can use any type of peanut butter (Crunchy, Smooth etc...)
**You can use chocolate chips, chocolate wafers, chocolate bars etc...
***Unfrosted brownies can be wrapped tightly and frozen. Thaw overnight in the fridge when ready to frost.
