Thin Mint Fudge Brownies

What would you do with an extra box of Thin Mints? We actually eat the girl scout cookies. But this weekend we made a pan of Thin Mint Fudge Brownies just for fun. Who wants to come over for coffee and the best brownies ever?

~Ingredients:

-Brownie Mix:

1 Cup Granulated Sugar.

1/3 Cup Unsweetened Cocoa Powder, sifted.

1/2 Cup All Purpose Flour.

1/4 Teaspoon Salt.

1/4 Teaspoon Baking Power.

1/2 Cup Butter, melted then cooled.

2 Eggs, room temperature.

1 Teaspoon Vanilla Extract.

-Frosting:

1 - 14 Ounce can Sweetened Condensed Milk.

1 Teaspoon Mint Extract.

  3 1/4 Cups White Chocolate Chips.

2 Tablespoons Butter.

1 7 Ounce Jar Marshmallow Cream.

Green Gel Color.*

-Topping:

1 Cup Chopped Chocolate Mint Cookies.**

~Directions:

~Making the Brownies:

Step 1: Preheat the oven to 350 degrees fahrenheit. Line a 9 inch by 9 inch pan with parchment paper or aluminium foil and grease lightly. Leave enough aluminum foil overhanging on the sides to lift the brownies out of the pan. Set aside.

Step 2Sift together all dry ingredients.

Step 3: Melt butter and set aside to cool slightly. 

Step 4In a medium bowl, beat two eggs with the vanilla. 

Step 5Add in and gently stir dry ingredients. 

Step 6Pour the melted butter into brownie mixture and mix until just incorporated. 

Step 7Spread batter in a prepared 8-inch square pan and bake for 20 - 22 minutes.

Step 8: Cool completely. Press the brownies down with your hand gently, so they are even all over.

~Making the Frosting:   

Step 9Stir together the mint extract and the sweetened condensed milk.

Step 10In a large sauce pan combine the white chocolate chips, the butter, and the sweetened condensed milk. 

Step 11Stir until melted and creamy.

Step 12Add the marshmallow cream and stir until melted. 

Step 13Add a little green gel color until it is the desired green color of your choice. 

Step 14Pour on top of the cooled brownies.

Step 15Sprinkle the top with the chopped cookie crumbs. 

Step 16: Press into the fudge gently with the back of a spoon.

Step 17Refrigerate for at least 4 hours before trying to cut into squares.

*You can use as little or as much green food coloring you want. It depends on your taste and what kind of food coloring you are using (gel, powder , liquid etc...)

**If you don't want to use the expensive girl scout cookies, then you can use any chocolate mint cookies from any store (Walmart, Target, Dollar Store, .99 Cents Store etc...)
