White Chocolate Raspberry Brownie Bites

These easy white chocolate Raspberry Brownie Bites are such a cute Christmas Day Dessert recipe!

~Ingredients:

-Brownie Mix:

1 Cup Granulated Sugar.

1/3 Cup Unsweetened Cocoa Powder, sifted.

1/2 Cup All Purpose Flour.

1/4 Teaspoon Salt.

1/4 Teaspoon Baking Powder.

1/2 Cup Butter, melted then cooled.

2 Eggs, room temperature.

1 Teaspoon Vanilla Extract. 

24 Raspberries.

24 White Chocolate Chips.

-Topping:  

12 Raspberries, cut in half.

12 oz White Baking Chocolate.

Sprinkles.

~Directions:

Step 1: Preheat the oven to 350 degrees fahrenheit. Line a mini cupcake tray with paper liners.

Making the Brownies:

Step 2: Sift together all dry ingredients.

Step 3: Melt butter and set aside to cool slightly.

Step 4: In a medium bowl, beat two eggs with the vanilla.

Step 5: Add in and gently stir the dry ingredients.

Step 6: Pour the melted butter into the brownie mixture and mix until just incorporated. Set aside.

Step 7Press one white chocolate chip into each raspberry and set it aside.

Step 8Spoon 1 tablespoon of batter into each mini muffin cup. 

Step 9Place raspberries in each muffin cup. 

Step 10Top with 1 tablespoon of brownie batter.

Step 11Bake for 14-15 minutes, or until brownies are done in the center. 

Step 12Allow to cool.

*Making the Topping:   

Step 13: Place a saucepan of water on the stove.

Step 14Place the heat proof bowl of white chocolate chips on top of the saucepan making sure the water doesn't touch the bottom of the bowl.

Step 15Stir the chocolate occasionally as it softens. 

Step 16When you have just a few small unmelted chunks of chocolate chips, remove the bowl from the heat.**

Step 17Dip half of each brownie bite in the melted white chocolate, and place each brownie bite on the parchment paper. 

Step 18Top with half a raspberry and sprinkles.

*To make the topping you can use a double boiler if you have one.

**The residual heat will melt the rest of the chocolate chips.
