Cranberry Pistachio Bliss Bars

These are similar to the popular Cranberry Bliss Bars from Starbucks, but we added pistachios, which makes them festive and gives a salty/sweet crunch!

~Ingredients:

-Brownie Mix:

3/4 Cup Butter, room temperature.

1 1/2 Cups Light Brown Sugar, packed.

2 Large Eggs.

1 Teaspoon Vanilla Extract.

1 1/2 Teaspoons Baking Powder.

1/2 Teaspoon Kosher Salt.

2 1/4 Cups All Purpose Flour.

1/2 Cup Dried Cranberries, chopped.

1/2 Cup Pistachios, chopped.

1/2 Cup White Chocolate Chips.

-Frosting:

1 (8) Ounce Cream Cheese Block, room temperature.

2 Cups Powdered Sugar.

-Topping:*

1/4 Cup White Chocolate Chips, melted.

Dried Cranberries, chopped.

Pistachios, Chopped.

~Directions:

~Making the Brownies:

Step 1: Preheat the oven to 350 degrees fahrenheit. Line a 9 inch by 9 inch pan with parchment paper or aluminium foil and grease lightly. Leave enough aluminum foil overhanging on the sides to lift the brownies out of the pan. Set aside.

Step 2: With a hand held mixer, mix together the butter and brown sugar together on medium speed for 2 minutes.

Step 3Add in the eggs, vanilla, baking powder, and salt and mix for another minute until smooth, scraping the sides of the bowl as necessary.**

Step 4Turn mixer to low and add in the flour and mix until just combined. 

Step 5Stir in the cranberries, pistachios, and white chocolate chips until evenly incorporated.

Step 6Spread the mixture into the prepared pan and bake for 18 - 20 minutes, until the center is just set. Don't over bake!

Step 7Allow the bars to cool completely in the pan before frosting.

~Making the Frosting:

Step 8With a hand held mixer, mix together the cream cheese and powdered sugar together until smooth. Spread evenly on the bars.

Step 9Sprinkle with the dried cranberries and pistachios if desired.

Step 10: Drizzle with melted white chocolate.

Step 11Let the white chocolate set and then cut into bars.
