These are similar to the popular Cranberry Bliss Bars from Starbucks, but we added pistachios, which makes them festive and gives a salty/sweet crunch!
~Ingredients:
-Brownie Mix:
3/4 Cup Butter, room temperature.
1 1/2 Cups Light Brown Sugar, packed.
2 Large Eggs.
1 Teaspoon Vanilla Extract.
1 1/2 Teaspoons Baking Powder.
1/2 Teaspoon Kosher Salt.
2 1/4 Cups All Purpose Flour.
1/2 Cup Dried Cranberries, chopped.
1/2 Cup Pistachios, chopped.
1/2 Cup White Chocolate Chips.
-Frosting:
1 (8) Ounce Cream Cheese Block, room temperature.
2 Cups Powdered Sugar.
-Topping:*
1/4 Cup White Chocolate Chips, melted.
Dried Cranberries, chopped.
Pistachios, Chopped.
~Directions:
~Making the Brownies:
Step 1: Preheat the oven to 350 degrees fahrenheit. Line a 9 inch by 9 inch pan with parchment paper or aluminium foil and grease lightly. Leave enough aluminum foil overhanging on the sides to lift the brownies out of the pan. Set aside.
Step 2: With a hand held mixer, mix together the butter and brown sugar together on medium speed for 2 minutes.
Step 3: Add in the eggs, vanilla, baking powder, and salt and mix for another minute until smooth, scraping the sides of the bowl as necessary.**
Step 4: Turn mixer to low and add in the flour and mix until just combined.
Step 5: Stir in the cranberries, pistachios, and white chocolate chips until evenly incorporated.
Step 6: Spread the mixture into the prepared pan and bake for 18 - 20 minutes, until the center is just set. Don't over bake!
Step 7: Allow the bars to cool completely in the pan before frosting.
~Making the Frosting:
Step 8: With a hand held mixer, mix together the cream cheese and powdered sugar together until smooth. Spread evenly on the bars.
Step 9: Sprinkle with the dried cranberries and pistachios if desired.
Step 10: Drizzle with melted white chocolate.
Step 11: Let the white chocolate set and then cut into bars.

*The cranberries and the pistachios are optional topping.
