Best Mint Brownie Recipe made easy & baked to fudgy, chocolate perfection! The double layer of mint & chocolate frosting is incredible. Perfect for St. Patrick's Day dessert!
~Ingredients:
-Fudge Brownies:*
1 Cup Granulated Sugar.
1/2 Cup Butter, softened.
2 Large Eggs.
1 Teaspoon Vanilla Extract.
1/3 Cup Cocoa Powder.
3 Tablespoons Whole Milk.
1/2 Cup All Purpose Flour.
1/4 Teaspoon Salt.
1/2 Cup Mini Chocolate Chips.
-Mint Filling:
3 Tablespoons Butter, melted.
2 Tablespoons Whole Milk.
1 1/2 Cups Powdered Sugar.
1/2 Teaspoon Mint Extract.
2 - 3 drops Green Food Coloring.**
-Chocolate Frosting:
3 Tablespoons Butter, melted.
1/4 Cup Chocolate Chips.
2 Tablespoons Whole Milk.
1 Cup Powdered Sugar.
~Directions:
Step 1: Preheat the oven to 350 degrees fahrenheit. Line a 8 inch by 8 inch pan with parchment paper or aluminium foil and grease lightly. Leave enough aluminum foil overhanging on the sides to lift the brownies out of the pan. Set aside.
~Making the Brownies:
Step 2: Whisk together sugar and butter.
Step 3: Add eggs, vanilla extract, cocoa powder and the milk and whisk until smooth.
Step 4: Stir in the flour, salt and mini chocolate chips, stirring until the flour is well incorporated.
Step 5: Bake for 30 minutes, until brownies are set.
Step 6: Remove from oven and let cool for 20 minutes before frosting.
~Making the Mint Filling:
Step 7: Combine all of the ingredients and whisk until smooth.
Step 8: Pour over cooled brownies.
Step 9: Gently spread frosting over the entire surface of brownies.
Step 10: Chill in the refrigerator for 30 minutes before topping with the chocolate frosting.
~Making the Chocolate Frosting:
Step 11: Combine butter, chocolate chips and milk in a bowl.
Step 12: Microwave for 45 seconds.
Step 13: Add powdered sugar and whisk until smooth.
Step 14: Pour the frosting over the cooled brownies, on top of the mint frosting.
Step 15: Let fully cool to set.
Step 16: Eat and Enjoy!
~Recipe Notes:
*You can use a box mix and then just add in the chocolate chips.
**You can use as little or as much green food coloring you want. It depends on your taste and what kind of food coloring you are using (gel, powder, liquid etc...). Check out our Baking Tips & Tricks book for more info. (Link in the comments below).
