3 large cucumbers (about 2 lbs)
1/2 cup of water
1 tbsp all purpose flour
2 tbsp tarragon vinegar
4 tsp sugar
1 1/2 tsp salt
1/2 tsp pepper
About 25 minutes (preparing time)
With vegetable peeler, peel cucumbers, leaving 1/2 inch wide strips of green peel for an attractive color. Cut cucumbers crosswise in 1/2 inch thick pieces; set aside.
In 3 qt. saucepan , mix water, and remaining ingredients. Add cucumbers; over high heat, heat to boiling. Reduce heat to low; cover and let simmer for 10 minutes or until cucumbers are tender and sauce is slightly thickened. Stirring occasionally.
