Niccolaio's POV


"Good morning everyone. We'll have a meeting in 5 minutes. VIP 3." paalala ko sa mga empleyado ng resto.


Today is Monday and we are so busy because of the new branch that will open on January 4. In every opening of a new branch, I always include all of my employees. Kumbaga, they're part of it, the menus, the design and interiors, all of it.


Because the restaurant will not be this successful if not for them. They're the ones whose with me in every struggle. My employees here in the main branch are the originals. Sila yung mga kasama ko simula pa nung maliit na resto lang ang El Niccolaio's. Kami yung magkakasama sa hirap non dahil sa kakulangan ng tao tapos noong una pa nga halos walang masyadong customer. Pero they worked hard para mas makilala ang resto and I am so thankful for them.


New branch opening is a reward for us. For all the hard works and sacrifices.


Maaga akong pumasok ngayon dahil nga kailangan namin magmeeting. We need to brainstorm regarding the menu and other stuff that will make the customers interested.


Binaba ko muna yung gamit ko sa office bago pumunta sa VIP 3 room.


"Congratulations everyone!" bungad ko sa kanila pagkapasok.


Nagsigawan naman ang mga ito sa tuwa. They're so happy, we're so happy that all our hard works has paid off.


"Grabe boss iba ka talaga!" sabi ni Emman


"Nah. It's all thanks to you guys."


"Boss may mga nilista na nga po pala kami tungkol don sa Menu na ilalaunch natin." one of the head chef, Greg, said.


"Sige bale yung paguusapan natin ngayon ay yung bagong Menu para sa next year, tapos yung para sa bagong branch, at iclear natin yung mga reservations for the next few days."


We talked about all of it for an hour. Mabilis lang natapos dahil ilang weeks naman na namin tong pinaghahandaan. Bale yung meeting ngayon ay pinakafinal na.


"So that's it for today."


Bumaba na din kami agad para makapaglinis ng resto at makapag ayos for our first reservation for today.


Every 3-5 Days before Christmas kasi hindi na kami tumatanggap ng walk in customer. Lahat is for reservations na. They reserved it prior to their desired day. After every reservation, pinapauwi ko na ang mga workers pero yung sahod nila is ganon padin, yung normal na sahod nila for a day. And meron din silang 13 month pay.


Tuwing Christmas at New Year naman, usually ang pumapasok ay yung mga Chef at ilan sa mga waiter and waitress. Kasi pag holidays na, madami pa din ang nagpapareserve kasi mga wala ng time magluto, kaya we came up with the idea of Delivery and Pick Up.


Nagluluto kami ng maaga para sa mga nagpapareserve ng foods and meals tapos every 10am ang deliver or pick up. After non wala ng pasok at ang balik na ulit ay 2nd week of January. Which is January 4 saktong opening ng bagong branch.


Ayoko na nga sana silang papasukin pag holidays. But they insisted na sayang naman daw ang benta tsaka sayang din kung di makakaorder yung mga customers. Iilang kainan na lang kasi ang bukas pag holiday season na.


We only had 2 reservations for today. Pinauwi ko na din sila agad dahil wala naman na gagawin pa. I spent my time in the office, doing all the paper works that I need for the opening.
