Elena awakens to the sound of her alarm clock piercing her eardrum. The digital clock's display shows 06:30 a.m. She gets out of bed, stretches, draws the curtains, and walks to the bathroom.
She leaves the bathroom after taking a 20-minute shower to change into her work clothes. Elena completes the look with a white puff - sleeved ribbed top, wide - legged trousers, and a light blue double - breasted blazer over the top, as well as an oversized double loop bag in dark olive and pebbled leather.
Elena walks downstairs to the kitchen, drops her bag on the chair, and goes to the refrigerator to check out what she would like to eat for breakfast, deciding on a cheesy mushroom and spinach omelette. She pulls out mushrooms, fresh baby spinach, an egg crate, shredded cheese, and butter. She places them on the kitchen counter, then goes to the upper cabinet and takes out olive oil, yellow onion, salt, black pepper, and parsley.
She prepares the mushrooms and onions by chopping them and setting them aside. Elena takes a large skillet from the lower cupboard and pours two tablespoons of olive oil into it before heating it over medium high heat. She adds the thinly sliced mushrooms and diced onions and cooks for about five minutes, or until golden and soft. She season it with salt and pepper to taste.
She stirs in the baby spinach with a wooden spoon until it has softened, then transfers the mushroom mixture to a plate and cleans the skillet with a kitchen towel, then cracks the eggs into a small mixing bowl with salt and pepper, and beats it with a fork until it is blended. She then adds a tablespoon of butter to the skillet, but this time she reduces the heat to medium-low. She then adds the beaten egg mixture and stirs it around the pan with a rubber spatula, pulling the sides in towards the centre as she swirls the pan slightly, allowing the runny egg mixture on top to hit the pan and cook.
Elena adds the mushroom mixture to the omelette and tops with a quarter cup of shredded cheese after the egg has finished cooking. She carefully lifts the edge of the omelette to check if the eggs are lightly golden on the bottom. When she notices they are finished, she gently folds it over the filling. She removes the omelette from the skillet and places it on a plate to serve, garnishing it with minced parsley and extra black pepper as desired.
Her Aunt comes downstairs to the kitchen and sits beside her while she is eating.
"That looks exquisite."
She makes a remark.
"It's definitely tasty." She responds and then eats the rest of her breakfast.
Aunty Aaliyah gets up and walks to the refrigerator to get her favourite Greek-style yoghurt, two kiwis, a pineapple, mango, and fresh ginger. She places them on the kitchen counter and goes to the upper kitchen cupboard to get sugar and granola, as well as water from the faucet.
Aunt Aaliyah pours one cup of water, sugar, and sliced ginger into a small saucepan and turns to face her.
"Elena."
"Yes,Aunty?"
"Perhaps it's best if..."
She comes to a halt.
"What's the matter?"
"In fact, never mind, we'll talk after work."
"All right, that's fine with me." Her Aunt nods and goes back to her work.
Elena checks her phone and notices that it is almost time to leave for work.
"I'm leaving now, Aunty."
"Have a lovely day, dear!" Her Aunt calls out.
Elena replied by saying, "You too."
She takes her bag, walks towards the hallway, and takes out the black leather loafers from the shoe storage, which her uncle Lanre had purchased for her as a gift. She unlocks the door and closes it behind her.
