Lunch time. I know. # The Struggle Is Real
What to eat, what to pack, what to eat out. And since it's fall, yall gonna be bringing out your basic lady. I wanted to make a post with vegetarian options(that can easily be made vegan) So that everyone can enjoy the yummy fall goodness. And what's even better, it's healthy but chu won't think it is :)
Number 1. Pumpkin salad.
This is my all time favorite. Savory, pumpkin, and just fall in your mouth
You need
Roasted pumpkin seeds
cooked spinach
cherry tomatoes
romaine lettuce
raisins or cranberries or both
shredded carrots
olive oil
salt
pepper
This is so easy, legit just cook the spinach, cut up all the veggies and throw it all into a bowl and mix it all together.
Number 2
Autumn veggie pasta
Ok so just let me start by saying pasta is my all time fave food. Pasta everything, like if I could only have one thing i could eat for the rest of my life, it would obviously be pasta. And this isn't my number one fave pasta ( It's actually Veggie Alfredo <3) But this pasta has got to be my number 2 fave
You need
Any pasta of your choice
Any tomato sauce of your choice
eggplant
pumpkin seeds
cherry tomatoes
olive oil
This is again super easy to make, like it's hard to screw it up
First cook your pasta, then place your cut up eggplant and tomatoes (cut them in half) on a baking sheet.
Drizzle olive oil on them and sprinkle on some salt and pepper. Then place in the oven at 350 fahrenheit and cook for 20 minutes
Once that's all cooked, all your going to do is add the sauce to the pasta, then pile on the eggplant, tomatoes, and pumpkin seeds. Bon apetite.
Number 3 Potato soup
Ok so instead of chicken noodle soup, my mom always make this for me when i'm sick. It's so good, and perfect for those chilly days. Its pretty easy too, only takes 30 minutes.
You need
Fresh potatoes
boxed potatoes (those intan potato thingies)
Garlic salt
pepper
Any milk you choose
some celery
baby carrots
and a can of corn.
Again this is really easy, first start by chopping up your potatoes into cubes, then add some oil to a pan and saute them until cooked.
Next add milk into a pot, add by cups. The more milk you add, the more soup you have.
Next in the pot goes your instant potato flakes, add in 1 cup for every cup of milk you have
Okay now finally goes in the celery and carrots and corn. Oh and the salt and pepper.
Cook on the stove for 30 minutes, and stir every few minutes.
And lunch is served! These are my all time favorite things to eat, not just in the fall but whenever. They taste legit so good. Btw these are my own creations, all credits go to me, and mom for the soup lol. Let me know if you guys try one of these out!
