CHAPTER 9: DRINKS (smoothies, cocktails, coffee, wine)

This includes Water, Milk, Juice, Smoothies, Soft Drinks, Alcoholic and Non-Alcoholic drinks etc. There are different kinds of drinks, starting from plain water, to warm beverages like coffee, tea and hot chocolate, caffeinated drinks etc.



1. Alcoholic drinks: Drinks produced by the saccharification of starch and fermentation of the resulting sugar, this is prepared by brewing. Examples include wine, beer, liquor etc. They contain ethanol.


2. Non-Alcoholic drinks: Have low concentration of alcohol by volume. They contain little to no alcohol. Example: low alcohol beer, non-alcoholic wine, apple cider.


3. Soft drinks: Soda Pop, Sparkling Water, Iced Tea, Lemonade, Root Beer, Fruit Punch, Milk, Hot Chocolate, Tea, Coffee, Tap Water, Milk Shake, Bottled Water, Juice and Energy Drinks.


4. Carbonated drinks: Have carbon-dioxide dissolved in them, though it can happen naturally through fermenting. Examples of companies producing this includes Coca Cola, PepsiCo.


5. Juice and Plant drinks: Citrus (Orange, Tangerine), Grape Fruit Juice (Pineapple, Apple, Grape, Lime, Lemon Juice), Coconut Water, Berries (Raspberry, Blackberry, Currants), Fermented Grape Juice produces Wine.


6. Smoothie: Fruits blended with ice and other ingredients.


7. Vegetable juice: Carrots, Tomatoes, Cucumbers, Celery etc.


8. Plant milk: Milk-like product derived from a plant source e.g. Soy Milk, Almond Milk, Rice Milk and Coconut Milk etc.


9. Cider: Fermented alcoholic drink made from fruit juice e.g. Apple Juice, Peaches, Pears etc.


10. Wine: Alcoholic drink made from fermented grapes. The natural chemical balance of grapes lets them ferment without the addition of sugar, acids, enzymes, water etc. yeast consumes the sugars in the grapes and converts them into alcohol and carbon dioxide. Wines are named after their produce e.g. Rice Wine, Pomegranate Wine, Apple Wine. Those with higher alcohol content include Barley Wine, Huangjiu or Sake.


11. Spirits: Are distilled beverages that contain no added sugar and have at least 20% alcohol by volume e.g. Brandy, Gin, Rum, Tequila, Vodka and Whisky.


12. Hot drinks: Drinks served warm or hot.


13. Hot chocolate: Heated drink consisting of shaved chocolate, melted chocolate or cocoa powder, heated milk or water and a sweetener. Once coffee is brewed, it can be served in various ways example, brewed coffee may be served with dairy products, it maybe sweetened with sugar or sweetener, when served cold it is called iced coffee. Espresso based coffee can be presented in different ways. When diluted with hot water (1:5), it is known as café Americano. Adding steamed milk makes it café Latte, steamed milk and milk froth make a Cappuccino. A dollop of hot foamed milk on top creates a caffe Macchiato. Iced coffee includes Frappes, Ice Lattes etc.


14. Tea: Includes white, yellow, green, oolong, black, post-fermented (dark). It can be flavoured with ginger, cloves, mint leaves, cardamom, bergamot, vanilla, spearmint etc.
