• BANGA RICE
This is a local recipe, where instead of tomato, we wash palm fruits and use it to cook jollof rice. Remembering the aroma alone can make you salivate.
Ingredients:
Palm oil or palm fruit
Rice
Smoked or/and dry fish
Scent leaf
Salt
Onions
Seasoning cubes
Crayfish
Pepper
Preparation tips:
Parboiled your rice, if you’re using palm fruits, cook and wash. Grind the pepper and crayfish, cut your onions, wash your scent leaves. Debone the smoked fish.
Preparation:
1. Pour the palm fruit fluid in a pot and allow to boil.
2. Add the parboiled rice and stir. Add the washed stock or dried fish.
3. Add in the ingredients, ogiri Okpei, salt to taste, seasoning cube, pepper, crayfish, onions and allow to cook.
4. Once the water in the rice is all drained up, cut the washed scent leaves and add and stir till thoroughly mixed.
Serving:
Serve with beans, chilled zobo.
