• COCONUT RICE
Ingredients:
Coconut
Rice
Crayfish
Pepper
Fish, beef, chicken or shrimps
Onions
Ginger
Garlic
Salt
Tomato sauce and paste
Preparation tips:
break and grate your coconut, parboil your rice, blend your tomatoes and ingredients. Cook your chicken/beef
Preparation:
1. Parboil the rice and set aside.
2. Cook your chicken or beef and set aside to cool.
3. Fry the beef or chicken and use the oil to fry your tomatoes. Add the oil, salt, grounded tomatoes and allow to fry for a while before adding the paste and allow to fry for more time.
4. While the Tomatoes is frying, you can grate your coconut if it’s not ready yet. Then add little water and squeeze out the milk.
5. Pour the chicken or beef stock and coconut milk into the frying tomatoes and stir.
6. Add the parboiled rice and the rest of the ingredients on top. The pepper, salt and seasoning cubes to taste, ginger, garlic, onions, crayfish etc.
7. Once the water has dried out, stir and voila!
Serving:
serve with the fried chicken or beef, fried shrimps. Chilled juice.
